Enjoy the flavours of the Mediterranean coast all year long with this simple sausage recipe. Creamy aioli, sweet caramelized vegetables and briny olive tapenade emphasize the sausage’s savoury flavour.
Serves 4| Prep Time: 10 minutes | Cook Time: 40 minutes | Total Time: 50 minutes
2 tbsp (30 mL) extra virgin olive oil
1 large Spanish onion, thinly sliced
1 red pepper, thinly sliced
1 yellow pepper, thinly sliced
4 links (450 grams) Ontario turkey sausages
2 tbsp (30 mL) balsamic vinegar
3 tbsp (45 mL) brown sugar
¼ tsp (1 mL) each salt and pepper
4 whole wheat sausage rolls
1/3 cup (85 mL) prepared aioli
2 tbsp (30 mL) prepared olive tapenade
Heat oil in a large non-stick skillet over medium-low heat. Add the onions and peppers and cook until very soft, about 30 minutes.
Meanwhile, preheat a lightly oiled grill to medium-high heat. Grill the sausages turning often, until cooked through, about 8 minutes. Transfer to a clean plate.
Once the onions and peppers are softened stir in balsamic vinegar, brown sugar, and salt and pepper.
Arrange the whole wheat sausage rolls on the grill to toast for 1 minute. To serve, divide the caramelized vegetables between rolls and top with sausages, aioli, and tapenade.
